Jam Cookies


I had some left over cherry filling from my previous recipe and thought of things I could make with it. Although the recipe for jam cookies does not take cherry filling, I thought I would try it anyway. Also, I realized I had peach and mango jam so I went with that vs the strawberry jam . Feel free to use the jam of your choice.

These cookies are so easy to make and I love how simple the ingredients are.  They make great summer or holiday cookies because they look and taste fantastic. Also, they make great entertainment for little kids as they can help you shape and fill them with the jam in the middle.





Ingredients:
1 cup butter at room temperature
2/3 cup confectioner's sugar
2 tsp vanilla
2 cups all-purpose flour
Jam of your choice

Step 1: Cream butter and sugar until nice and fluffy.
* The butter should turn into a lighter color when truly creamed.


Step 2: Add the vanilla and flour.
(At first it will look like this but continue to mix so that it comes together like dough.)


Step 3: Take about 1 tbsp of dough and shape it into a ball and flatten in the middle to make room for the jam. Set them on a cookie tray with parchment paper underneath.
*Leave enough space in between each cookie so that they have some room to expand as they bake.

Step 4: Fill the middle of the cookies with the jam of your choice.
Step 5: Bake cookies at 325 degrees for 20 minutes.
*Sometimes the dough will look white but that is ok because they continue to cook as they cool off.
