Sushi Rice


I really love sushi. It is a very light and tasty meal. What I don't like about it is how expensive it can be.  It was important for me to learn how to make it myself so I can have it as often as I want without having to spend a pretty penny each time.

In this blog I will only cover how to make the rice.  The rice making is such an art of itself and I feel that in order to make good sushi you need to first master making the rice.

It took me several recipes and tries to come up with this one. The reason being that I needed a recipe that had the right amount of sugar and salt ratio. I have been to several sushi restaurants and I feel that in each one the rice tastes different. Also, I needed a recipe that made a smaller portion. I cook for my husband and myself so 3 cups turns out to be too much for us and I prefer the rice to be fresh vs refrigerated. This recipe will easily give you about 4 rolls.

Let get started shall we?

(This is my go to rice brand and I usually find it at any grocery store.)
Ingredients: 

1 cup medium-grain white rice
1 1/4 cup cold water
2 tbs rice vinegar
1 tbs sugar
1/2 teas salt

Step 1: Gently wash the rice until the water comes out clear.
*It is important not to skip or rush this step because you need to wash as much starch from the rice as possible so that your rice come out nice and sticky at the end. 
*Allow your rice to fully drain so you do not add any extra water when cooking it.


Step 2:  In a medium sauce pan add your rice and 1 1/4 cup of water. Let your rice and water sit for about 45 minutes. (This allows the rice to soften before cooking it.)
3: Bring your rice to a boil. As soon as the water boils place your cover on and turn your heat to low. Cooking time takes about 10-12 minutes.
* It is important that you do not take the lid off until your rice is fully cooked so that the steam does not leave the rice.
*Once cooked remove from heat and let it sit for about 10 minutes with the lid on.

Step 4: While your rice rests take a small sauce pan and combine the rice vinegar, sugar, and salt. I like to swirl the sauce pan over the heat until the sugar and salt have dissolved.
*Do not let the sauce pan touch the fire as this will make the vinegar boil and you do not want it to boil. This gives your rice a different taste.
Step 5: Pour the cooked rice into a wooden bowl and pour the vinegar mixture over the rice. Gently fold your rice so that it all gets coated with the vinegar. Allow for the rice to fully cool off before eating.
* If you are not going to eat it right away place a kitchen towel over the bowl and set it aside.
