Chicken and Potato Flautas



Flautas, also known as taquitos, are my absolute weakness. They are not the healthiest but OMG are they delicious. How can you refuse a fried taco? Impossible.

Just like any other Mexican dish there are many variations of these fried tacos. This recipe that I am showing you is how my mother always made them while growing up. She made them out of chicken and potato. When we couldn't eat meat she would make them only out of only potato and they were just as delicious.

In this recipe I will not only show you how to make the flautas but also how to serve your plate . I always found it interesting how my mom had a way of serving this plate that was totally different than how it is served at your typical Mexican restaurant.



Ingredients for Flautas:

Chicken breast
Potato
Garlic tooth
Onion
Corn tortillas
Vegetable oil
Salt to taste



Ingredients to dress your Flautas:


-Sour cream
-Cotija Cheese
-Beans
-White Rice
-Iceberg lettuce
-Avocado





Step 1: Place the chicken breast, onion, and garlic tooth in a pot of boiling water. Season with salt to taste. Boil until chicken has cooked and is soft. (hint: I like to cut the chicken into smaller and thinner pieces before I boil it so that it cooks faster. This will seriously cut your cooking time in half.)

Step 2: Peel and cut the potato into cubes. Pour the potato cubes and salt into a different pot and bring to a boil. (hint: You want to boil the potato only until it cooks. You do not want your potato to be so soft. If the potato becomes too soft it will leak out of your tacos and will make a huge mess in the oil when it comes to frying them.)

Step 3: Shred your cooked chicken. (hint: When you are in a hurry use a hand held mixer to shred it. This will shred your meat so fast and you don't even have to wait until it cools off because your hands won't be doing the work! Genius.)


















Step 4: Mash your potato into your shredded chicken. You can can use a masher but I like to use my hands instead. I wash my hands before, I promise. 😁
















Step 5: Time to make the tacos. Cook your tortillas just enough to make them soft and easier to roll up. I have a comal which is similar to a griddle. If you do not own one it is okay. Wrap a stack of about 6 tortillas in a kitchen towel and warm them in the microwave. It doesn't take long for them to cook so check every 30 seconds.

Grab some of the chicken and potato filling and line it up in a line like in the picture below. Tightly wrap your tortilla and make sure to leave the last flap on the bottom so that it remains closed. Some people put a tooth pick through to keep it closed.

















Step 6: In a deep pan pour the vegetable oil. The amount varies on the size of your pan. I pour enough to cover half of the taco. Turn the heat to medium high and allow the oil to warm up. Once the oil is warm place as many tacos as you can laying down. When the tortilla on your tacos has turned a golden brown turn the taco and cook the other side.


Step 7: Once the tacos are cooked on both sides remove from the pan and place them standing up in a bowl. I like to place a few paper towels to absorb the excess oil. Your tacos are done. 😁


Now lets talk about how to serve them. You will need to make white rice, fresh beans, and salsa on the side. Now do the following in this order.

1) Rice
2) Beans
3) Tacos

4) Sour Cream
5) Iceberg Lettuce
6) Salsa
7) Cotija Cheese
8) Avocado and Tomato
