Guilt-Free Peanut Butter Chocolate Chip Cookies.
I came across this recipe when I was looking for something that was flourless. Every time I am craving something sweet and don't want the guilt of eating something heavy with flour, I turn to these cookies.
These cookies do not lack flavor nor do they have the texture of a flourless baked good. You will not believe how soft they are. They almost melt in your mouth. They best part is they only take 6 ingredients and you only need a bowl and a whisk. Yup, it is that simple. Let get started!
Quick note: when I make these cookies, I only do half the recipe because it is just my husband and myself. That is why you see a small quantity in the pictures.
Ingredients:
2 Eggs
1 cup of peanut butter
(I have only used smooth vs chunky. I have only used skippy. I am not sure how they turn out with natural or organic peanut butter.)
1 tsp baking soda
1 cup chocolate chips
(I personally like semi-sweet)
1/2 cup packed brown sugar
Dash of vanilla

Step 1: In a bowl whisk the brown sugar, eggs, vanilla, and baking soda until well incorporated. It should look a little like this:
Step 2: Add the peanut butter. Have patience with this step. Start with small parts of the peanut butter until it is loosened and it will slowly incorporate itself with the rest of the mixture. You know you are done when you end up with a slightly harder and dryer mix.
Step 3: Fold in your chocolate chips. It's ok to add a few more than what the recipe calls for, I always do 😋
Step 4: Line a cookies tray with parchment paper. Each cookie should be slightly bigger than a quarter. Do not strive for perfection. The cookies dough is very sticky. I usually take a spoon and with one finger slide it off the spoon and onto the cookie sheet.
Step 5: Preheat oven to 350 degrees and bake for 10 minutes.
(Do exactly 10 minutes, cookies may look slightly soft, but when you take them out and let them cool, they will finish cooking.)
Step 6: Pour yourself a glass of milk and enjoy! 😋
