Chocolate Crinkle Cookies


Have you ever wondered what would happen if a brownie met a cookie? Wouldn’t that be amazing? Well, this cookie is that with a beautiful coat of sweet and light sugar. Honestly it is music to my ears. They are soft and chocolatey like a brownie with a hint of crunch on the outer shell.

Make sure that when making these cookies you give yourself time. They are quite easy to make but they do require refrigeration, which gives them the crinkle effect. Also, the dough is soft and the refrigeration helps firm it up so that you can shape them into cookies balls.







Ingredients:

1 cup unsweetened cocoa powder (look at recipe below to measure the correct amount)
2 cups sugar
1/2 cup vegetable oil
4 eggs
2 cups all purpose flour (measured in the same method as the cocoa powder)
2 tsp vanilla extract
2 tsp baking powder
1 tsp salt
1/2 cup confectioner's sugar


Step 1: In a large bowl, add the unsweetened cocoa powder. The way to measure is to spoon the cocoa into your measuring cup and with a butter life or straight edge, take off the excess. Do not pat down, this will give you extra cocoa and will alter your recipe.











Step 2:  Add sugar and oil and beat ingredients with a hand held mixer.




















Step 3: Add eggs and vanilla and mix until well combined.





















Step 4: In a separate bowl combine all of your dry ingredients: flour (remember to measure with the same method as the cocoa powder), baking powder, and salt.












Step 5: Pour your wet ingredients into your dry ingredients and stir slowly with a spoon to avoid spilling any flour. Once the flour has been incorporated into the chocolate mixture cover the bowl with plastic wrap.  Place the bowl in the refrigerator for a minimum of 3 hours. You could even leave the dough overnight and make the cookies the next day. 😊


Step 6: Time to make the cookies!!! Line two cookie trays with wax paper and preheat the oven to 350 degrees. Place your confectioners sugar in a bowl. By no means is this a science but with an ice cream scooper or spoon take about 2 tablespoons of dough and drop it into the confectioners sugar. With your hands coat dough with sugar and form into a ball. The sugar makes it easier to form without it sticking to your hands.



Step 7:  Repeat step 6 until you cover the tray with cookie balls. With this recipe I made about 30 cookies. Bake your cookies for 12 minutes. They may look slightly under done, but they continue to cook as they cool off. If you overcook them, they loose their moistness and chewiness.
